Seems to me that I remember finding a web page where someone had taken the running gear from a LS650 and slipped it into a Norton Manx frame.
The Norton Manx was the dominant racing chasis with a 500 cc single engine back in the late 1950's - definitely the ne plus ultra of its day -
THe converstion might have even been a commercial job - lay your money down and ride away on a new Snorton or something like that.
That is about as close to a cafe racer as I remember seeing
